I was standing in front of my refrigerator, staring inside of it trying to decide what to eat. At first I felt like I had a bunch of randomness, but I was able to put together a great healthy dish that tastes as good as it looks. Hope you enjoy.
Seared Cod With Broccoli Apple Slaw and Delicata Squash
1/2eachdelicata squashseeded and sliced width-wise
2eachCod filletsseason with salt and black pepper
1eachsweet, crisp applejulienne
16 oz bagbroccoli slaw mix
2tbsprice wine vinegar
to tastesalt & black pepper
Preheat oven to 350F.
In a bowl, whisk together sesame oil, honey and vinegar. Add apple, broccoli mix and cilantro. Toss all together and set aside.
Place cut squash on baking sheet and coat with olive oil and season salt & pepper to taste.
Place squash n oven and cook for 10-15 minutes.
Heat remaining olive oil in a saute pan. When hot place seasoned cod and cook for 3 minutes, then turn over and cook for 3 more minutes. (For thinner fillets, cook for 1.5 minutes on each side instead)
