Ingredients
  • 3tbsp olive oilreserve 1 tbsp for fish
  • 1/2each delicata squashseeded and sliced width-wise
  • 2each Cod filletsseason with salt and black pepper
  • 1each sweet, crisp applejulienne
  • 16 oz bag broccoli slaw mix
  • 2tbsp sesame oil
  • 2tbsp rice wine vinegar
  • 1tbsp honey
  • to taste salt & black pepper
  • 2tbsp cilantrofinely chopped
Instructions
  1. Preheat oven to 350F. In a bowl, whisk together sesame oil, honey and vinegar. Add apple, broccoli mix and cilantro. Toss all together and set aside.
  2. Place cut squash on baking sheet and coat with olive oil and season salt & pepper to taste.
  3. Place squash n oven and cook for 10-15 minutes.
  4. Heat remaining olive oil in a saute pan. When hot place seasoned cod and cook for 3 minutes, then turn over and cook for 3 more minutes. (For thinner fillets, cook for 1.5 minutes on each side instead)
